Notes
- This is a small batch recipe.
- Peach salsa is best used within 48 hours.
- For optimal flavor, choose fresh tree-ripened peaches, as they are the star of the show.
- Use freshly squeezed lime juice, and squeeze a little on the peaches while you are dicing them. This will help keep your peaches from turning brown while you cut them.
- If you have fresh garden tomatoes or access to them, by all means, use them. I used grape tomatoes because they were the most flavorful and colorful tomatoes available at the time.
- Store in an airtight container for up to 2 days.
